Vineyard
We carefully select grapes from vineyards we have long term relationship’s to maintain consistency of our Sparkling wine from mainly the irrigated areas within a short transit to the winery to ensure the grapes are delivered in optimum condition.
Vintage
Despite being able to label our Sparkling as a vintage we choose not to as this allows us the flexibility if needed to blend across vintages if needed for consistency in the event one vintage is not as good as the next we can blend across vintages to maintain consistency from one release to another.
Winemaking Details
With a focus of fruit and good acidity with a refined structure all important for making a quality sparkling wine.
Fruit is machine picked in the cool of the evening to retain good fruit aromatic’s, fruit is then gently pressed and the wine then undergoes 100% malolactic fermentation and held on lees until required for blending and stabilisation in stainless steel tanks. Then the final base wine is then bottled off and bottle fermented maintain that fine consistent bubble and fruit / acidity balance, before spending a short period of time on tirage.
